# How to Make It:
- Combine ground pork, soy sauce, sesame oil, grated ginger, minced garlic, chopped spring onion, and white pepper in a bowl. Mix until fully incorporated.
- Place 1 teaspoon filling in the center of each wonton wrapper, moisten edges with water, fold and seal into triangles or envelopes. Set aside covered with a damp cloth.
- Bring chicken stock to a simmer in a large pot. Add smashed lemongrass, torn kaffir lime leaves, galangal slices, and sliced red chilies. Simmer for 10 minutes to develop flavors.
- Add sliced mushrooms and quartered tomatoes to the broth. Simmer for 5 minutes. Remove lemongrass, galangal, and kaffir lime leaves using a slotted spoon.
- Stir in fish sauce, lime juice, and sugar. Taste and adjust seasoning with additional lime juice or fish sauce as needed.
- Gently add assembled wontons and shrimp if using to the simmering broth. Cook for 4 to 5 minutes until wontons float and shrimp turn pink.
- Add baby bok choy or spinach and simmer for 1 minute until wilted.
- Ladle soup into bowls and top with fresh coriander leaves, sliced spring onions, lime wedges, and chili oil if desired.
