01 - 1½ cups mixed olives (green and black, pitted)
02 - 7 oz feta cheese, cut into 0.4 inch cubes

→ Marinade

03 - 3 tbsp extra virgin olive oil
04 - 1 tbsp freshly squeezed lemon juice
05 - 1 tsp dried oregano
06 - 1 tsp fresh thyme leaves (optional)
07 - 1 small garlic clove, thinly sliced
08 - ½ tsp red pepper flakes (optional)
09 - Freshly ground black pepper, to taste

→ Garnish

10 - 2 tbsp fresh parsley, chopped
11 - Zest of ½ lemon

# How to Make It:

01 - Place mixed olives and feta cubes in a medium bowl and set aside.
02 - Whisk together olive oil, lemon juice, dried oregano, fresh thyme (if using), garlic, red pepper flakes, and black pepper in a small bowl.
03 - Pour marinade over olives and feta, then gently toss to evenly coat without breaking the cheese cubes.
04 - Cover and refrigerate for at least 30 minutes, up to 4 hours for enhanced flavor.
05 - Bring to room temperature before serving. Sprinkle with chopped parsley and lemon zest, toss lightly, and serve.
