# What You'll Need:

→ Beef

01 - 3 lbs chuck roast, trimmed

→ Seasoning & Soup Mix

02 - 1 packet onion soup mix, approximately 1 oz
03 - 1 teaspoon black pepper
04 - 1 teaspoon dried thyme

→ Vegetables

05 - 1 lb carrots, peeled and cut into 2-inch pieces
06 - 1 lb baby potatoes, halved
07 - 3 celery stalks, cut into 2-inch pieces
08 - 1 large onion, cut into wedges

→ Liquids

09 - 2 cups beef broth
10 - 2 tablespoons tomato paste
11 - 2 tablespoons Worcestershire sauce

→ Gravy Thickener

12 - 2 tablespoons cornstarch
13 - 2 tablespoons cold water

# How to Make It:

01 - Pat the beef chuck roast dry with paper towels. Season generously with black pepper and dried thyme.
02 - Arrange carrots, potatoes, celery, and onion wedges in the bottom of the slow cooker.
03 - Place the seasoned roast directly on top of the prepared vegetables.
04 - In a mixing bowl, whisk together beef broth, onion soup mix, tomato paste, and Worcestershire sauce until well combined.
05 - Pour the broth mixture evenly over the roast and vegetables.
06 - Cover the slow cooker and cook on LOW setting for 8 hours, or on HIGH setting for 5 to 6 hours, until the roast is fork-tender and vegetables are fully cooked.
07 - Transfer the cooked roast and vegetables to a serving platter using tongs or a slotted spoon.
08 - In a small bowl, whisk cornstarch with cold water to create a slurry. Stir this mixture into the slow cooker liquid. Cover and cook on HIGH for 5 to 10 minutes until the gravy reaches desired thickness.
09 - Slice or shred the roast into portions. Arrange on serving platter with vegetables and spoon the hot gravy over the top.

# Additional Tips::

01 -
  • It requires almost no active cooking time—just prep and let the slow cooker do the heavy lifting for eight blissful hours.
  • The onion soup mix transforms into a rich, umami-packed gravy that tastes like you've been tending to it all day.
  • Everything cooks together, so you get perfectly tender beef, silky vegetables, and an incredible sauce without multiple pots.
  • It's naturally gluten-free with one simple swap, making it welcoming for different dietary needs.
02 -
  • Don't skip patting the roast dry—I learned this the hard way when a damp surface prevented seasoning from sticking and made the gravy watery instead of savory.
  • The vegetables underneath the roast do a crucial job: they prevent sticking and create a flavor layer that enriches your sauce, so don't skip putting them down first.
  • Onion soup mix brands vary wildly in saltiness, so taste your sauce before serving and adjust rather than adding salt blindly.
03 -
  • Check your slow cooker's size—you want at least 6 quarts so the roast cooks evenly and nothing overcrowds or undercooks.
  • If you're serving at a specific time, remember that this can hold on WARM setting for an hour without deteriorating, giving you flexibility if timing gets tight.
